Watermelon and Mixed Greens Salad – with fried gouda cheese and basil-peppermint vinaigrette

Ensalada de sandia y lechugas mixtas con queso gouda frito y vinagreta de albahaca y hierbabuena

Mexican Gazpacho – garnished with avocado and pork rind croutons

Gazpacho mexicano con aguacate y crotones de chicharron de puerco

Tuna Carpaccio – marinated in chili guajillo vinaigrette

MAIN COURSES

Seared Fresh Tuna – with a delicate radish vinaigrette and hibiscus sauce served with lettuce, spinach and watercress garnish and decorated with fried strips of sweet potato and leek

Atun fresco sellado servido con vinagreta de rabano y salsa de jamaica acompañada de lechuga, espinaca y berros decorado con una paja de camote y poro frito

Grilled Pork Chop – with sauteed vegetable, mashed potatoes and a hibiscus and red wine sauce

Red Snapper Filet – on a bed of chile poblano-mussels-white wine sauce served with

sauteed spinach and zucchini
